Huli Huli Chicken

1 cup soy sauce
2 tsp garlic powder
1/4 cup liquid from bottled ginger
Mix together in a spray bottle. Grill chicken pieces over charcoal with
hickory or mesquite woodchips. Spray the chicken liberally while grilling.

Does anyone remember "Mamaduck" from the old TSR message boards? She lives
in Hawaii and here is her description of Huli-Huli chicken:
Huli Huli Chicken
"Huli" means to turn over... Chicken halves are spread out on big metal
racks and are sprayed with a mixture of Shoyu (soy sauce - local style is a bit
weaker than Kikoman - - add 1/4 Cup water to 3/4 Cup Kikoman - - then add
crushed garlic and smashed fresh ginger to taste.... I add about 1 Tbs garlic and
3 or 4 slices of ginger to 1 Cup Shoyu...... Put it in a sprayer bottle and
spray before each huli of the chicken.... Grill on mesquite (local kine is
kiawe) charcoal until pau (done)........ Make sure you get some dark crispy bits
on the skin... Serve with white rice and plenny napkins (or dark shorts will
do)..... It is ono (good)......
As Steve remembered - - when I would see the clouds of smoke rising up from
a Huli-huli sale, I would have all my tourists open the windows of my tour
bus so that they could inhale one of the best smells in Hawaii.... Huli-huli is
one of the big fundraisers here..
((my notes: I've found that chunks of garlic and ginger clog my spray
bottle, so I refined the 'recipe' to use powder and liquid))..
