Blackfoot fried yeast bread...
1 cup lukewarm water 1 1/4 ounce package of active dry yeast 2 tablespoons unsalted softened butter 1 tablespoon raw organic sugar 1/2 teaspoon sea salt 2 1/2 to 3 cups unbleached course flour (can substitute 1/2 cup with cornmeal) Oil or shortening for deep frying
Place water in a large mixing bowl. Sprinkle yeast over water and let stand for five to ten minutes. Add enough flour/cornmeal to form a stiff dough. Allow to rise for one hour covered with a towel in a warm spot not in direct sunlight. Place oil in a deep saucepan or cast iron skillet and heat to about 350-400 degrees. Form dough into disks about four inches in diameter and about 1/4 inch thick, and deep fry for around a minute per side or until golden brown. Only makes 8 to 10 pieces which is enough for one or two people...eh.
