Ecuadorean Arepas
1 cup frozen corn, blended to paste with 4 Tblspns EVOO and 1 Tblspn milk almost one cup Masa Harina 1 egg About 1/2 cup shredded mozzarella 1 chopped Chimayo chile from my garden
I let the corn-masa mixture sit for half an hour before mixing in the cheese, then added a bit of masa to make a less sticky dough. Rolled it out and used a tumbler to cut out circles of about 3/8" thick cakes. Fried those in melted Smart Start until golden, with brown flecks.
I could have used one or two more Chimayos, this early one had thin flesh. But the cakes were excellent, and I'll do that again.
