ANASAZI APPLE PIE
Ingredients:
4 cups APPLES, peeled, cored and sliced thin 1/4 cups RAISINS 1/2 cup WATER 1 tsp. LEMON JUICE 3 Tbsp. all purpose FLOUR 1/2 cup BROWN SUGAR 1/2 cup SUGAR 1 Tbsp. grated fresh LEMON RIND 1/2 tsp. APPLE PIE SPICE 1/2 tsp. GROUND CINNAMON 1 Tbsp. fresh LEMON JUICE 1/4 cup WATER 2 tsp. BUTTER Prepared PIE CRUST SHELL (pkg of 2)
In large saucepan simmer apples, raisins, water and lemon juice for eight minutes, stirring occasionally. Set aside to cool. In large bowl combine flour, sugars, lemon rind, apple pie spice and cinnamon. Sprinkle this mixture over cooled apples along with lemon juice and water to coat well. Spoon into prepared pie shell. Dot with butter. Preheat oven to 450 degrees. For top of pie, cut pie dough into strips and place lightly over apple slices. Sprinkle with additional sugar to taste, place on baking sheet and tent with foil. Bake 15 minutes at 450 degrees. Reduce heat to 375 degrees and bake 20 minutes. Remove foil and bake additional 20 minutes to brown.
