Mom's Indian Scones (2) (Six Nations Reserve, Ontario Canada)
1 C all-purpose flour 2 tsp baking powder 1 to 1 1/2 C buttermilk (depends on weather,dryness of flour, etc) 1 tsp baking soda
Mix flour & baking powder. Mix soda with buttermilk separately, then add to flour mix. Use more buttermilk if needed to hold together but not like a batter but big lump, I guess you'd say. Form into 2 round patties about 2 inches thick & fry in a generous amount of Crisco shortening & margarine(butter) over medium low heat. It is NOT deepfried though. When brown on underside(lift with spatula to check underside), turn over carefully & brown other side. If top sounds hollow when tapped with your fingers, it is done. Split in half with fork. Best when served hot with plenty of margarine(butter). Still good when cold too but not as good as when hot. ENJOY!
