1/4 c Olive oil 4 c Leached acorns 1 Medium-size onion, chopped 6 Cloves garlic, chopped 4 sm Chiles, seeds and ribs Removed, chopped 2 tb Chopped fresh cilantro or Parsley leaves 1 ts Chili powder 1 ts Dried sage, finely crumbled 1 ts Freshly ground cumin 1 ts Dried oregano, finely Crumbled 2 tb Bragg's Liquid Aminos or Tamari soy sauce
This recipe is a wild alternative to Mexican refried beans, with acorns replacing the beans. Serve it as a side dish with other Mexican foods.
Heat the olive oil in a large skillet over medium heat. Add all the ingredients except the Bragg's Liquid Aminos and cook, stirring, for 15 minutes.
Stir in the Bragg's Liquid Aminos and serve.
