Sumac Jelly
Two 6 cups water add 4 nice bunches of red sumac blossoms/berries. Bring to a boil. Simmer 5 minutes. If sumac is cooked more than 10 minutes it will impart a lot of tannin to your tea or broth making it acid and bitter Strain broth. You should have 5 1/2 cups broth. To the broth add juice of 1 lime, and a box of pectin. Pectin dissolves better for me when whisked in while the broth is cooled. Bring to a rolling boil. Add 6 1/2 cups sugar all at once. Bring back to a rolling boil and boil for 1 minute. Jar up. This makes a beautiful rosy clear jelly.
