Dandelion Jelly
2 cups dandelion blossoms 5 cups water 1 package pectin 5 1/2 cups sugar
Boil the blossoms for 4 minutes (water will be golden yellow) Strain and throw away the blossoms. Put 3 1/2 cups of the liquid into a large pot with the pectin. Bring to a rolling boil. Add sugar all at once and boil for 1 minute stirring constantly. Jar up. I do not add lemon or orange flavoring to my jelly as it has a wonderful flavor already
