Rock Cornish Hens with Grapes Again, wild fowl can be substituted.
1 1/2 T. margarine 1 tsp. salt 1/4 tsp. pepper 2 Cornish hens, 1 1/2 lb. ea., thawed 1/2 C. chicken broth 3/4 C. grape juice, unsweetened 1/2 C. seedless grapes, cut in half
Preheat oven to 350°F. Melt margarine in a saucepan; add salt an dpepper. Split hends and place in a shallwo baking pan, skin side up. Baste with margarine mixture. Roast hens in uncovered pan for 1/14 to 1 1/2 hours, or until tender and browned and meat thermometer reads 180°F; baste several times with pan dripppings. When hens are done, remove them from pan. Pour pan drippings into a small saucepan and add chicken broth, and grape juice. Simmer 15 minutes or until volume is reduced to 3/4 cup. Add grapes and cook 2 minutes over moderate heat.
Nutritive values per serving (1/2 hen with 1/4 cup sauce): cholesterol 8g, protien 25g, fat 8g, calories 206, sodium 744mg. Food exchanges per serving: 3 lean meat exchanges plus 1 fruit exchange.
