Cream of Sunroot Soup
Warm and satisfying. Serve it plain, with variations, and/or with toppings. Accompany with thick, crusty slices of buttered, home-made bread or biscuits. A winter feast.
Base
1 c root; cooked, peeled and cubed 3 c milk 2 T. flour 2 T. butter salt to taste
Blend all ingredients. Place in saucepan and bring to a simmer. Add variation(s) if desired and simmer an additional 5 - 10 minutes to blend flavors. Serve hot as is, or with additional toppings.
Variations Add one or more of the following:
1 tsp. dried basil, rosemary, dill, or thyme 1 tsp. onion powder 1 clove minced garlic, roasted or lightly sautéed 1 c. finely chopped spinach or other greens 1 c. finely chopped vegetables 1 c. finely chopped cooked meat 1 c. shredded cheddar cheese 1 c. diced or cubed, marinated tofu
Toppings
Sour cream Shredded cheese Croutons of any flavor Seasoned, shredded meat Chopped parsley, chives, onion Bacon bits
