-------------------------------------------------------------------------------- 1 1/2 pounds of Boneless Chicken Breast 1/2 cup Chopped Onion 1 can (14 1/2 oz) White Beans ( I also added a can of Butter Beans) Tasted pretty darn good!!! 1 can (4 1/2 oz) Green Chilies 1/2 cup Chicken Broth 2 tsp. Ground Cumin 1 1/2 tsp. Garlic salt (I used garlic powder) 3/4 tsp. Oregano Leaves 1/4 tsp. Chili Powder (I used more, about 1 1/2 tsp) 1/4 tsp. Ground Red Pepper
Heat a well oiled skillet or use Pam, cooked cubed chicken and chopped onion until chicken is done and onion is tender. Stir in remaining ingredients, bring to a boil. Reduce heat and simmer uncovered 10-15 minutes stirring occasionally. I added mine to a crockpot on low heat and let it simmer in there for about three hours. It gave it time to blend the flavors and you talk about something that warmed you up
