Papago Tepary Bean Soup Yield: 6 servings
2 C. Tepary beans, soaked 1 tsp. ea. oregano and cumin 1 clove garlic, diced 1 med. onion, chopped 6 C. water 1 C. diced celery 3 C. tomatoes with juice 2 carrots, sliced 4 slices bacon, diced, optional
Drain soaked beans, cover with fresh water, and bring to boil in a large pot. When beans are tender, fry bacon in a skillet until limp. Remove bacon; add onion, carrots, celery and garlic and saute. Add bacon, tomatoes with juice and the remaining spices to the skillet; cooking 10 minutes. Add to the beans. Simmer another hour until beans are mealy-tender.
Serves 6.
Serve with flour tortillas or fresh frybread. Dried red chile pepper may be stirred into pot during the last 10 minutes.
