Bear Bourguignon
2 lbs of bear meat, cut into cubes 1 T oil 2 T flour salt & pepper (I go heavy on the pepper) 3 garlic cloves, minced 1 tsp thyme 1 bat leaf 1 can golden mushroom soup 2 cans beef consomme' 1 envelope of onion soup mix 6-8 mushrooms sliced 1 onion chopped 2 celery stalks chopped
cook meat in oil till brown...add flour - keep stirring...add salt, pepper, garlic, thyme, bay leaf, mushrooms, celery and onions...cook for 1 hr ...add all soups...cook for 2 more hours remove bay leaf before serving...serve with mashed potatoes
