Clam Chowder Categories: Native, Soups, Shellfish, Bacon, Clams Yield: 4 Servings
1/2 lb Bacon, fried and cut in Pieces 2 ts Bacon drippings 8 sm Potatoes cut up in chunks 1 pt Fresh clams with liquor (juice) cut in small pieces 1 md Onion, cut up 2 Celery stalks, cut in small Pieces 4 1/2 c Water 16 oz Bottle of clam juice Salt and fresh ground Pepper
In a large pot, cook onions in bacon drippings. Add all other ingredients to pot and heat to a boil. Reduce heat and simmer for 50 minutes or until potatoes are tender.
