Mikle's Char Chowder Categories: Native, Canadian, Fish, Soups Yield: 6 Servings
2 1/2 lb Char, Filleted And Cut Into -Bite-Size Pieces 1/2 lb Bacon, cut into small Pieces 3 c Potatoes, peeled and diced Into 1/2 inch pieces 3 lg Carrots, sliced 3 md Onions, coarsely chopped 3 Stalks celery, sliced 1 ts Each - pepper, salt, thyme 1 tb Lemon juice 1/2 c Parley, finely chopped or 1/4 c Dry 3 c Milk
In a large soup pot, fry bacon til crisp. Set bacon aside. Pour off all but 2 Tbsp fat. Fry onions in hot fat until transparent. Stir in potatoes, carrots and celery. Add water to just cover the vegetables. Bring to a boil, reduce heat to a simmer and cook until vegetables are soft, about 10 - 15 min. Add char and simmer until almost done, about 10 min. Add salt, pepper, thyme, lemon juice and parsley. Add milk and heat until hot. DO NOT allow to boil once milk has been added. Check seasonings and adjust if necessary. Sprinkle with bacon bits and serve.
