Zuni Green Chili Stew
* 2 1/2 pounds lamb, cut into 1S cubes * 2 Tb. flour * 2-3 Tb oil * 1 cup chopped onion * 2 cloves garlic * 1 1/2 cups mild green chile, roasted, peeled and chopped * 4 juniper berries, pulverized * 1/1/2 tsp oregano * 2 cups water * 2 one pound, 14 ounce cans hominy corn * salt and pepper to taste Dry the meat and dredge in the flour. Brown the lamb, onion and garlic in the oil. Add the chile, juniper berries and oregano. Add the water and simmer for 1 1/2 hours or until the meat is tender. Add the hominy and simmer 15 minutes. This is good with cheese and minced Italian parsley sprinkled over the top.

This turned out great. I used antelope instead of lamb and subbed a bay leaf for the juniper berries. After browning the meat and veggies, I put the lot in my slow cooker at medium for 4 hours. It tasted great garnished with finely sliced green cabbage and radishes with a squeeze of lime juice.
