Aqwizijik Lasob (Vegetable Soup)
3 tablespoons oil (corn or olive)
1 large sweet onion, chopped
4 cloves fresh garlic, minced
1 large or 2 small sweet potatoes, cut in cubes
1 cup butternut squash, cut in cubes
1 large tomato, chopped
1 bell pepper (any color), finely chopped
2 cups broth or water
1 15-oz. can garbanzo beans
1 cup corn, canned or frozen
1 cup green beans or limas, canned or frozen
1 cup green peas, canned or frozen
2 tablespoons paprika
2 teaspoons turmeric
1 or 2 bay leaves
1/4 teaspoon cayenne
1 teaspoon each salt and pepper
Heat the oil in a large pot and saute the onion and garlic for a few minutes. Add the sweet potato and squash, stir and cook for 5 minutes. Add the spices, stir, then add the tomato and pepper. Stir and cook for another minute and add the broth slowly. Simmer all for 5 minutes; add the rest of the vegetables and simmer about 20 minutes more. Stir often to blend the flavors. This is great with crusty bread.
