Aztec Vegetable Soup
Ingredients * 3 Cups Chicken Stock * 1 Bunch Scallion -- Chopped * 2 Medium Carrots -- Sliced * 1 Can Tomatoes -- Chopped * 1 Medium Jicama -- Chopped * 6 Ounces French-Style Green Beans * 3 Stalks Celery -- Chopped * 1 Tablespoon Parsley -- Chopped * 1/2 Teaspoon Salt Directions Combine all ingredients in a large pot. Simmer over low heat for 1 hour. Serve. Serves 4
