Elder's Bread Recipe Fill a 3-quart pan with hot water, melt 3 big heaping TBS of shortening, and 4 Tbs. of salt,and cool to luke warm (temp should be like baby's milk). In the meantime, fill a coffee cup 2/3 of sugar, and 4 tablespoons of yeast and mix with fork. When shortening is melted and water is luke warm, add together yeast mix, and pour into large canning kettle, add enough flour until mixture can be kneeded , about 12 lbs. (add enough flour to mixture so it can be kneaded (10 lbs.-12 lbs. give or take). Knead dough 15 minutes, or until dough is smooth and elastic, dump down onto floured table (will be heavy) and then grease well the inside of your canning kettle, replace dough, grease top of dough, cover with plastic wrap and kitchen towel. Let rise once, then punch down, rise again, punch down, then shape into loaves or rolls and place in greased pans and let rise a third time. Bake 350 until golden brown, brush with melted butter. This recipe will yield about 10-12 loaves which you can make into rolls, etc.
