Skillet Corn Bread
Makes 4 servings
Ingredients * 1 - cup cornmeal * 1 - teaspoon baking soda * 1 - teaspoon salt * 2 - cups buttermilk * 2 - eggs, lightly beaten * 2 - Tablespoon cooking oil Directions Preheat oven to 425° F. Grease heavy skillet. 1. In a large mixing bowl, add the cornmeal, baking soda, and salt. 2. Mix. 3. Add the buttermilk, eggs, and cooking oil. 4. Blend. 5. Pour into skillet and bake 20 minutes or until done.
