SPICED WATERMELON (Belize)
INGREDIENTS
1 watermelon 1 1/2 pts. water 4 pieces of ginger 2 in. stick cinnamon 1 tsp whole allspice 4 cloves sugar to taste METHOD:
1. Halve and quarter melon, remove most of red flesh and use for another purpose. 2. Peel the rind off thinly and cut pale green flesh into 3/4 in. pieces. Put this into saucepan with water, add ginger tie the spices in a bag and add. 3. Bring to boil and simmer until melon is tender about 20 mins. 4. Drain juice and measure it and add equal amounts of sugar. 5. Stir until sugar is dissolved, add fruit, ginger spices, bring to boil for 15 mins more. 6. Discard spices and pack melon into hot sterilized jars, filling with boiling syrup. 7. Seal and store.
