Guava Cake - Puerto Rico
10 T. (150 ml) butter 1 cup (250 ml) sugar 2 cups (500 ml) flour 1 T. (15 ml) baking powder 1 tsp. (5 ml) ground cinnamon 1 tsp. (5 ml) ground nutmeg 1/4 tsp. (1 ml) salt 2 eggs 1 lb. (450 g) guava paste*, cut into 16 slices
* Available in supermarkets and Hispanic groceries.
Beat the butter an sugar together until light and fluffy. Sift together the flour, baking powder, spices, and salt and add the butter mixture, mixing until well combined. Add the eggs one at a time and mix well. Spoon half the batter into a buttered 8"x8"x2" (20x20x5 cm) baking pan. Top with the sliced guava paste and cover with the remaining batter. Bake in a preheated 350 degree F (180C) oven for 35 to 40 minutes, until golden brown. Cool on a wire rack.
Serves 8 to 12.
