Maple-Chipotle Glazed Salmon
1/2 teaspoon chipotle chili powder 1/2 teaspoon ground cumin 1/2 teaspoon salt 1 tablespoon canola oil 4, 6 ounce salmon fillets 1 tablespoon maple syrup
Preheat the broiler. Combine the chili powder, cumin and salt and rub the mixture evenly over the surface of the fish. Heat the oil in a cast-iron (or other ovenproof) skillet. Add the salmon and cook 3 to 4 minutes on each side, or until nearly cooked through. Remove from the heat and drizzle the maple syrup evenly over the top. Place under the broiler for 1 minute. Remove from the oven and use a brush or butter knife to spread the hot syrup evenly over the surface of the fish. Makes 4 servings.
