Cauliflower & Tomatoes
1 pkg. (1oz.) frozen cauliflower 2 finely cut green onions 1 T. margarine 1/2 tsp. salt 1 can (10 oz.) diced tomatoes 2 T. grated Cheddar cheese
Cook cauliflower as directed on package; drain and return to saucepan. Add green onions, margarine, salt, and tomatoes with liquid. Cover and simmer 2 to 3 minutes. Turn into a serving dish, and sprinkle with cheese on top.
Nutritive value per serving (2/3 cup): cholesterol 6g, protein 9g, fat 4g, calories 68, sodium 611mg. Food exchange per serving: 1 vegetable exchange plus 1 fat exchange.
