Appaloosa Beans & Corn
1 T. oil 1 cup onion, chopped 2 cloves garlic, minced 2 cups meat or vegetable broth or water 5 1/2-oz. dried Appaloosa Beans, cooked until tender, and drained 1 1/2 cups corn 2 tsp. fresh sage, chopped 1/2 tsp. salt 1/4 tsp. pepper
In a large saucepan, heat oil; saute, onion and garlic for 5 minutes or until vegetables are tender. Stir in broth, beans, corn, and sage. Cook 10 to 15 minutes, or till mixture is heated through. Stir in salt and pepper. Makes 4 main-dish or 8 side-dish servings (4 cups).
