Sherry Ambrosia
2/3 C. (110 grams) fresh orange sections 1 C. (200 grams) fresh grapefruit sections 1 C. (125 grams) diced apples 2 T. sherry extract flavoring 1 tsp. lemon juice 1 to 2 tsp. Splenda 1/3 C. (50 grams) sliced bananas 2 T. shredded coconut (can use unsweetened) 3 maraschino cheeries, drained
Cut orange sections in halves, grapefruit sections in quarters, and core (but not pare) apples in bite size pieces. Measure and weigh fruits, then mix well with sherry flavoring, lemon juice, and Splenda. Turn into a jar, cover, and chill for 1 hour or longer. Just befofe serving, add bananas; mix well. Spoon into 6 individual dessert dishes. Sprinkle coconut on top of fruits and top with a maraschino cherry half.
Nutritive value per serving (1/2 cup): cholesterol 12g, protein 1g, fat 1g, calories 59, sodium 1mg. Food exchange per serving: 1 1/2 fruit exchange.
