Spicy Cornmeal Fried Catfish (Sioux)
Description Ingredients * 4 Large Catfish Fillet * Oil For Frying * 1 Large Egg -- Beaten * 1/2 Cup Buttermilk * 1/2 Cup Cornmeal * 1/4 Cup Flour * 1/2 Teaspoon Salt * 1/4 Teaspoon Cayenne * 1/4 Teaspoon Allspice * 1/4 Teaspoon Chili Powder * 1 Teaspoon Pepper * 1/4 Teaspoon White Pepper * Salsa * Scallions -- For Garnish * Lemon Wedges -- For Garnish Directions Heat oil to 1 1/2 inch depth in large skillet. Mix the beaten egg with milk; set aside; Mix cornmeal, flour and seasonings in other bowl; dip catfish in buttermilk egg mixture and roll in spicy cornmeal mixture; ease them into hot oil, fry for 4-5 minutes, turning often. Drain on paper towels, serve with salsa, scallions, and lemon wedges. Serves 4
