The Ancient Baking Powder – Ash lye
Our ancestors did not have baking powder. They made lye from ashes to add to corn meal or flours to make bread.
Use a container with holes in the bottom. Do NOT use aluminum.
Have a second container without holes ready.
Fill the first container with hard wood ashes. (Exactly what it is. The ashes of wood burned. Hickory was considered the best for this).
Pour water into the ashes and let the water soak through and out of the holes into the second container.
This is strong like acid so please be careful with it.
Our ancestors mixed this with their corn meal in small amounts. They did not have baking soda or powder. It also gave the food a little more salty flavor than the bland flavor.
