I have heard of a time when Indigenous people did not suffer from health ailments such as heart disease, high blood-pressure, and diabetes. This was a time when the people of the land were healthy and did not struggle from being listless and overweight. When foods were a vital part of being and the quality of being was a vital part of the foods that were gathered and consumed. Those times have long since passed and only seem now nostalgic tales told by the old ones or seen in momentary documentaries.

It has become a well known fact that Traditional Native American foods have nutritional value and benefits. What is less well known is what are considered Native American traditional foods and how to prepare them.
Classic Cooking Academy introduces the Classic and Native American Cooking Program. This program combines classic hands-on culinary arts training and Native American food techniques with the history of Native American foods.

Program Description
This unique program will be taught at the Classic Cooking Academy in Scottsdale, Arizona. Its 24 week intensive hands-on culinary instruction is the first of its kind and offers student skills, knowledge, and credentials to gain employment in this growing field. An interesting component to the program explores Native American foods and its traditional significance to the regional inhabitant tribes that consumed these meals. This is an interesting aspect that is not typically offered in the culinary arts experience. Students receive hands-on supervised training along with the historical significance. They will also work independently and are encouraged to improve on their creativity.
Developer and Program Director Nephi Craig (White Mountain Apache/Navajo) states;
“It is a personal goal of mine to provide authentic representation of
Native peoples in the world of professional cooking while training
future Native American cooks/chefs. We will be teaching Native history,
culture, traditions and future of Native Food through a universal
language of taste.
We aim to use food as a vehicle to combat social ills like heart
disease, obesity, and diabetes in our communities. We also aim to use
Native food as a method of preserving and revitalizing Native culture
and communities by providing a comprehensive and unique culinary
education that is offered nowhere else in the country.”
