ALLIGATOR MEATBALLS I
1 1/4 lbs. alligator meat
1 c. oil
1 oz. black pepper
1/4 bunch celery
2 oz. salt
2 bunches scallions
2 1/2 lbs. cracker meal
1 1/2 lbs. dry onions
2 1/4 lbs. mashed potatoes
1 bulb garlic
3 oz. Nugget Savory seasoning
1/2 c. chopped parsley
8 eggs
Grind alligator meat, onions, scallions, parsley, garlic and celery
together. cook in oil for 3 to 9 minutes. Add mashed potatoes, eggs, Nugget Savory
seasoning, salt and pepper. Mix well, chill and shape into balls. Roll in
cracker meal and fry in deep fat.

ANNA'S CROCK MEATBALLS
1-2 lb. finely ground alligator meat (or other, if not available)
1 box Italian bread crumbs
1 med. raw egg
1/8 tsp. salt
1/8 tsp. cayenne
Fresh mushrooms, cut in sm. pieces (optional)
1/2 tsp. minced onions
1/2 tsp. green onions
1/2 tsp. parsley
1/2 tsp. bell pepper
Mix all ingredients with your hands while gradually adding bread crumbs.
Roll into whatever size balls you want. Keep a glass of cold water on the side
to dip your fingers in occasionally, which will help the meat mixture from
sticking to your hands. Brown the meatballs slightly and drain on paper towels.
Then add to red gravy (recipe above). Cook 2-3 hours. Serve over favorite
pasta.
