HO-CHUNK BLACKBEAN SOUP W/WILDRICE
1 tsp canola oil 1 tbsp vinegar 3 cloves garlic, minced _ tsp crushed red chili pepper 2 onions, chopped 1 cup beef or vegetable broth 1 green sweet pepper, seeded and chopped 2 cups cooked black beans Salt and freshly black pepper 1 tomato, peeled, seeded and chopped 2 cups hot cooked wild rice Chopped green onion 1 stalked celery, chopped Thin lemon wedges 1. In large nonstick saucepan, heat oil over medium heat, cook garlic, onions, green pepper, tomato, and celery, stirring often, for 7 minutes or until onion is translucent. Stir in vinegar and red chili pepper. Pour in broth. 2. Add beans; bring to a boil. Reduce heat and simmer, stirring occasionally, for about 20 minutes or until liquid is reduced. Season to taste with salt and pepper. 3. Spoon rice onto serving plate or bowl. Spoon beans over top. Garnish with green onion and lemon wedges.
